100 gmbutter,softened
2 tbspwhite(shiro)miso
2 tspgratedfreshginger
¼ cup(60ml)extra-virgin
oliveoil
4 firmwhitefishfillets
(200gmeach),skinless
andboneless
1 bunchredradish(500gm),
thinlysliced
2 springonions,thinlysliced
50 gmwalnuts,roastedand
coarselychopped
1 tbsp lemon juice

1 Combinebutter,misoand
gingerina smallbowl and
seasontotaste.
2 Heat2 tbspoftheoilin
a largenon-stickfryingpan
overhighheat.Addfishand
cookfor2 minuteseachside
oruntilbrownedandjust
cookedthrough.Addhalfthe
buttermixturetothepanand
cookuntilmelted(30seconds).
3 Meanwhile,combineradish,
springonionandwalnutsin
a bowl.Whisklemonjuice
withremainingoilina small
jugandseasontotaste.Add
dressingtosaladandtoss
gentlytocombine.
