butter,andstiruntilbuttermelts.

3 Forvanillawafers,position
ovenracksintheupperand
lowerthirdsoftheovenand
preheatovento175°C.Linetwo
bakingtrayswithbakingpaper.
Siftflour,bakingpowderand
¾tspsaltintoa bowlandset
aside.Combinebutter,sugar
andvanillainthebowlofan
electricmixerfittedwitha
paddleattachment.Beat
mixtureonmediumspeed,
scrapingdownthesidesas
necessary,untillightandfluffy
(about4 minutes).Addegg,
beatuntilsmoothandscrape
downthesidesofthebowl.
Addmilkandvanillaextract,
andmixjusttocombine.Add
flourmixtureandbeatjustto
combine.Refrigeratedough
torest(10minutes).Scoop
tablespoonsofdoughandroll
intoballsandpatbetweenyour
palms into discs about 4cm in

diameter.Placeonprepared
bakingtrays,leavingatleast
2.5cmbetweenwafers.Bake
wafers,rotatingpansfromtop
tobottomandfronttoback
halfwaythrough,untiledgesare
golden-brown(20-25minutes).
Coolwaferscompletelyon
bakingtraysonwireracks.
Storewafersinanairtight
containerforupto5 daysat
roomtemperature.

¾ cupcastersugar
½ cupcornflour
8 largeeggyolks
1 tbspvanillaextract
4 tbspunsaltedbutter,diced
andrefrigerated
VANILLAWAFERS
2¼ cupsplainflour
¾ tspbakingpowder
8 tbspunsaltedbutter,diced,
atroomtemperature
½ cupvanillasugar
Scrapedseeds
of1 vanillabean
1 largeegg
1 tbspfull-creammilk
1 tbspplus1 tspvanilla
extract
WHIPPEDTOPPING
3 silver-strengthgelatine
leaves,halved
1⅓ cupscastersugar
3½ tbsplightcornsyrup
¼ cupmilk
3 tbspskim-milkpowder
1¾ cupsplus2 tbsp
thickenedcream

1 Forbananamilk,preheat
ovento175°C.Placebananas
ona bakingtrayandbakeuntil
peelsdarkenandsplit,and
fleshbeginstobubbleout
(15-20minutes).Removefrom
ovenandcooltoroom
temperature.Scoopoutroasted
bananafleshintoa saucepan.
Addmilkandsugar,stirwell
and bring to a simmer over

carefullypourhotsugarmixture
intothebowl,streamingit down
thesideawayfromthewhisk,
whiskinguntilmixturehas
cooled,tripledinsizeandis
opaquewhite(5-6minutes).
Combinemilk,milkpowder
anda scant¼ tspseasaltin
a smallbowlandwhiskto
combine.Withmixeron
high,addthemilkmixture
in3 batches,stoppingto
thoroughlyscrapedownsides
ofbowlaftereachaddition.
Transfermixturetoa container,
coversurfacedirectlyand
refrigerateovernight.
5 Thenextday,transfer
toppingbasetothebowlof
anelectricmixerfittedwith
a whiskattachment.Whisk
onmedium-highspeeduntil
smooth(about4 minutes).Add
thickenedcreamin3 batches,
thoroughlyscrapingdownthe
sidesofthebowlaftereach
addition,andwhisktostiff
peaks,scrapingdownthesides
ofthebowlatleastfivetimes
moretoensureagainstlumps
(about3 minutes).Transfer
toppingtoa container,cover
andrefrigerateuntilready
touse.Toppingwillkeep
refrigeratedforupto3 days.
Makes6 cups.
