Oaxaca,wherehewasinspiredbytraditional,home-stylecooking.
“Somevillagesrelyonlyonwhattheyproducethemselves,so
disheshighlightjusta fewcoreingredients,”saysLewis.It’sthis
focusonlocal,seasonalproducethatdriveshismenuat LaCasita.
Wholesnapperis rubbedwitha sour-orangeglazeandgrilled
overwoodfire. Albacoreis marinatedinan achiotepaste, grilled,
andservedwitha spicytomatillosalsaonhandmadetortillas.
