toprovidethefoundationfora vibrantseasonalmenu.He spent
mostofhistimeinMexicoCityandthesouthernseasidestateof
Oaxaca,wherehewasinspiredbytraditional,home-stylecooking.
“Somevillagesrelyonlyonwhattheyproducethemselves,so
disheshighlightjusta fewcoreingredients,”saysLewis.It’sthis
focusonlocal,seasonalproducethatdriveshismenuat LaCasita.
