floured surface to a 22cm


x 32cmrectangle.Refrigerate
briefly,thenusinga rollingpin,

endofthepastryandfolddough
overbutter,thenfoldbaseover
toenclosebutter.Turndough
90 degreesclockwiseandroll
pastryawayfromyoutoa 20cm
x 50cmrectangle.Foldtop-half
ofdoughover,thenbottom-
thirdoveragain.Turn 90
degreesandrepeat,then
refrigeratetorest(overnight).
3 Repeatfoldingprocess
twicemore,thenrefrigerate
torestagain(overnight).

floured surface, and roll outto

a 24cmx 46cmrectangleand
refrigerateuntilfirm(1 hour).
5 Spread’ndujaevenly
overdough,thenadd
pecorinoina thinlayeron
top.Refrigerateuntilfirm.
Cutpastryinto1cm-wide
stripsandtwirleachstrip
tocreatea twisteffect,then
placeonbakingtrayslined
withbakingpaperand
refrigerateuntilrequired.
6 Preheatovento220°C.
Bakepastriesinbatches
untilgoldenandcrisp
(10-15minutes).Transfertoa
plate,coolbriefly,thenscatter
overchilliflakesandserve.
