1 Forshallots,heatoilin a
smallsaucepanto120°C.Add
shallot and deep-fry, stirring


occasionally,untilgolden
(1-2minutes;becareful,hot
oilwillspit).Removeshallots
witha slottedspoonanddrain
onpapertowels.Reserveoil.
2 Forsalad,combinelimejuice,
sugar,chilliesandfishsauce
totastein a bowlandstiruntil
sugardissolves.Stirthrough
mangojustbeforeserving.
3 Preheata barbecuetohigh.
Threadscampitailslengthways
ontobambooskewersand
brushlightlywithshallotoil,
thengrill,turningoccasionally,
untilcharredandalmostcooked
though(2-4minutes).
4 Toserve,toplettuce
leaveswithsalad,scampi,
friedshallotsandherbs.

bring250mlwatertothe
boil,addlemonmyrtle,then
remove from heat and leave

toinfuse,stirringoccasionally,
for 10 minutes.Strain(discard
leaves),thenaddsugarand
stirtocombine.Cool,then
transfertoa bottleand
refrigerateuntilrequired.
2 For1 serve,combine
40mlsyrupand1 tspvinegar
ina tallCollinsglass,andstir
tocombine.Fillglasswith
ice,topwithsodawaterand
