1 Lebanesecucumber,
coarselygrated
95 gm(1/3cup)naturalyoghurt
1 garlicclove,finelygrated
1½ tbspfinelychopped mint
and dill


1 Preheatgrilltohigh and
positiontheshelftositat the
top-thirdoftheoven.
2 Placeonionina smallbowl
withlimejuiceanda pinchsalt
andgentlymassagetosoften.
Coverandsetasideforonion
topickle(10minutes).
3 Forcacik,combinegrated
cucumberanda largepinch
saltina bowlandsetaside
toextractexcessmoisture
(10minutes),thensqueeze
waterfromcucumber(discard
water).Stirthroughyoghurt,
garlicandherbsandsetaside.
4 Placebreadona largetray
linedwithbakingpaperand
usinga fork,prickbreadall
over.Usingyourhands,spread
a thinlayerofsausagemeat
ontobread.Drizzlewith1 tbsp
pomegranatemolassesand
season.Placeundergrilluntil
meatis cookedthroughand
breadis golden(8minutes).
5 Cutflatbreadintothick
slices,topwithonionpickle,
cacikandremainingmolasses.
Season to taste and serve.
