80 gm(1cup)finely grated
pecorino

1 Cookpastaina large
saucepanofsaltedboiling
wateruntilal dente.Drain,
reserving1 cuppastawater.
2 Meanwhile,thicklyslicethe
largemushrooms,tearoyster
mushroomsinhalfandenoki
mushroomsintosmallerclusters.
3 Heatbutterandoliveoil
inthesamesaucepanover
mediumheat.Addthelarge
mushroomsandcook,stirring
occasionally,untiltender(5
minutes). Add garlic, thyme

andremainingmushrooms
andcook,stirringoccasionally,
untilgoldenandstartingto
crisp(5minutes).Remove
halfofthemushroomsfrom
thepanandsetaside.Add
reservedcookingwater,pasta
and3/4ofthepecorinotothe
saucepan,seasontotaste
andstirtocombine.
4 Dividepastaamongbowls.
Topwithreservedmushrooms,
