Thethingthatsetsbagelsapartfromotherbreadsis thatthey
areboiledbeforebaking.Thepurposeofboilingis tosetthe
crust,whichpreventsthebreadfromrisingtoomuch.This
creates a more dense interior, resulting in a chewy texture.

orevena swipeofspicy’Nduja.Alternatively,serveit
on its own as a snack or with a selection of dips.

3 tspdriedyeast
250 ml(1cup)warmmilk
2 tbspcastersugar
450 gm(3cups)plainflour
1 eggyolk
1 tbsppoppyseeds
2 tspcarawayseeds
2 tspsesameseeds
2 tsplinseeds
2 tsp sea salt flakes

1 Combineyeast,milk,1 tbsp
sugarand½cupwaterin
a largebowlandmixuntil
yeastis dissolved.
2 Stirinsiftedflour,3 tspsalt
andremainingsugar,intwo
batches,untilmixtureforms
a firmdough.Turndoughonto
a flouredsurfaceandknead
untildoughis smoothand
elastic(5-7minutes).Place
doughina largeoiledbowl,
coverandsetasideina warm
placeuntildoughhas doubled
in size (1 hour).

3 Greaseandlightlyflouran
oventray.Turndoughontoa
flouredsurfaceandkneaduntil
smooth.Dividedoughinto 12
portions;formeachportioninto
a ball.Pressyourthumbinto
thecentreofeachballtomake
a hole,spinningtheballaround
yourthumbuntiltheholeis
one-thirdthesizeofthebagel.
Placebagels3cmapartontray.
Coverandstandin a warmplace
untildoubledin size(15minutes).
4 Preheatovento200°C.
Greaseandlinetwooventrays
withbakingpaper.Workingin
batchesoffour,dropbagels
onebyoneintoa large
saucepanofboilingwater,
ensuringtheydon’ttouch.
Boilfor1 minute;turnbagels
overandboilforanother
minute.Usinga slottedspoon,
transferbagelstolinedtrays.
5 Brushtopsofbagelswith
combinedeggyolkand1 tsp
water;sprinklewithcombined
seedsandsaltflakes.Bake
untilgolden(20minutes),
then cool on a wire rack.

60 ml(¼cup)extra-virginolive
oil, plus extra for drizzling

180mlwarmwaterina jug.
Placeonequarteroftheflour
ina bowlandwhiskinyeast
mixture. Coverandsetaside
ina warmplaceuntil bubbles
appear (1 hour).

2 Stirremainingflourand1 tsp
saltintomixturewithoil.Knead
doughona flouredsurfaceuntil
smooth.Placedoughina large
lightlyoiledbowl.Coverand
standina warmplace(1 hour).
3 Turndoughontoa lightly
flouredsurface.Divideintotwo,
thenrolleachinto1cm-thick
ovals,notlongerthan30cm.
4 Preheatovento240°Cand
heattwooventraysinovenfor
5 minutes.Combineremaining
ingredientsina smallbowl,
thenspreadonpide.Carefully
transferpidetohottrays,then
bakeuntilgolden(15minutes).
Drizzle with olive oil to serve.➤
