(5minutes).Mixinmascarpone
byhand,foldinguntilcompletely
incorporated.Transfertoa large
mixingbowlthencleanand dry
thestandmixerbowl.
2 Placeeggwhitesintheclean
bowlandwhiskonmedium
speeduntilsmooth,creamy
peaksareformed(5minutes).

Whendonewell,tiramisucanbeoneofthenicestthingstoeat.
A traditionaltiramisuhasonlytwolayersofbiscuit,butyoucan
scalethisrecipeupquite easily, or use a tall, narrow vessel, to
create more layers.

3 Ina smallbowl,combine
coffee,marsalaandbrandy.
4 DunkSavoiardibrieflyinto
coffeemixture,makingsure
theyarefullyimmersed,and
arrangethemonthebase
ofyourchosenservingdish.
Theideais nottohavethem
eithersoppingorstill-crisp,
butsomewhereinbetween.
I dip,holdfora second,turn
andholdforanothersecond,
andthenremove.It paystobe
diligenthere,asnoonewants
a tiramisuswimminginliquid.
Scoopthefirsthalfofthe
mascarponemixtureoverthe
biscuitlayer.Spreadoutevenly.
Repeatthesoaked-Savoiardi
layerandthenfinishwiththe
secondmascarponelayeron
top.Dredgewellwithbitter
cocoapowderandplaceinthe
fridgeuntilset(1-2hours).If you
like,youcanaddmorecocoa
powder just before serving.
