    ahead to make the dulce de leche.


230 gmunsaltedbutter, cool
andpliable
80 gmicingsugar
100 gmtoastedalmonds
300 gmplainflour
½ tspfineseasalt
¼ tspbakingpowder
Cookingoilspray
40 gmdemerarasugar, for
sprinkling
SALTYDULCEDELECHE
395 gmtinsweetened
condensedmilk
1½ tspseasaltflakes
½ tsp vanilla paste

1 Tomakethedulcedeleche,
placetheunopenedtinof
condensedmilkina saucepan
andfillwithenoughwaterto
justcoverthetopofthetin.
Bringtotheboil,thenturn
heatdownsowateris atan
effervescentsimmer.Simmerfor
4 hours(don’tsimmerforlonger
orthedulcedelechewillturn
oilyandgrainy).Keepa close
eyeonthewaterlevel,topping
it upwithhotwaterasneeded,
tokeepthetincompletely
covered.Turnheatoffand
leavetintocoolinwaterfor
30 minutes,thenremovetin
frompanandallowtocool
completely.Don’tbetempted
toopenthetinuntilit’scooled

3 Meanwhile,placealmondsin
a foodprocessorandpulseto
a sandconsistency.Transferto
a bowlwithflour,saltandbaking
powderandstirtocombine.
Adddryingredientstocreamed
butterandmixonlowuntil
combined(30seconds),taking
carenottooverworkdough.
4 Preheatovento150°C.Lightly
spraytwobakingtrayswithoil
andlinewithbakingpaper.
5 Transferdoughtoa lightly
flouredsurface.If doughis too
softtoroll,wrapandchillfor 15
minutes.Rollouthalfthedough
toaneven5-6mmthickness(it
doesn’tmatterwhattheoverall
shapeis).Usinga 7cmcutter,
stampoutthecookies.Repeat
processwiththeremaining
portionofdough.
6 Placecookiesonprepared
traysandscatterwithdemerara
sugar.Bakeuntilsetandtoasty
brownincolour(45minutes).
Transfertoa wireracktocool.
7 Layhalfthecooledcookies,
bottom-sideupona cleantea
towelandpipeorspoona blob
ofdulcedelecheoneachone.
Sandwichwiththetopcookie
andlightlypresstobringthe
fillingouttothesides,justflush
withthecookie.Chillfor 10
minutes before serving.●
