“Boiled peanuts are quintessentially
Southern, but we ate peanuts with
ginger and chiles in India, so I
understood the idea. It’s the same
with corn. My parents lived in
Tennessee years ago, and after they
returned to India, my mother would
cook corn with butter and salt as a
memory of that time. This salad is a

tribute to her dish and to the roasted
corn that you’ll find served on the
streets in Ahmedabad, India.”
