Savor the powerful fl avors of a bourbon barrel–aged Cabernet Sauvignon.


MAKE A BOLD STATEMENT


Total Time 45 min; Serves 4 to 6

STEP 1 Preheat oven to 425°. Toss
brassicas and thyme with 1⁄4 cup
olive oil and season with salt and
pepper. Spread on a baking sheet
and scat er 2 tablespoons but er on
top. Roast for 20 to 25 minutes.

STEP 2 In a cast-iron skillet, heat 1
tablespoon olive oil. Season steak
with salt and pepper; cook over
moderately high heat, turning often
(until thickest part registers 120°).
Transfer and let rest for 10 minutes.

STEP 3 In the same skillet, cook
shallots and garlic until softened.
Add wine and cook, scraping
up browned bits, until almost
evaporated, 3 minutes. Add stock
and reduce for 2 minutes. Remove
from heat and whisk in remaining
but er; season with salt and
pepper. Carve steak and serve with
brassicas and sauce.

pounds multicolored
brassicas, such as baby
caulifl ower and Romanesco,
cut into 1-inch fl orets
thyme sprigs
tablespoons extra-virgin
olive oil, divided
Kosher salt and pepper
tablespoons cold unsalted

1-pound hanger steaks
small shallots, minced
garlic cloves, minced
cup red wine
cup chicken stock
