Strawberry Shake
with Strawberry Syrup
Serves 2
For the strawberry syrup:
1 cup sugar
1 cup strawberry purée

(^1) / 4 cup water
(^1) / 8 teaspoon salt
(^1) / 2 teaspoon vanilla extract
For the milkshakes:
1 pint vegan vanilla ice cream
2 cups frozen strawberries
1 cup almond milk
(^1) / 4 cup sugar
1 teaspoon vanilla extract
(^1) / 4 cup vegan whipped cream



  1. For the strawberry syrup, in a
    saucepan, add sugar, strawberry purée,
    water, and salt, and bring to a boil.
    Reduce heat and simmer for 5 minutes,
    stirring constantly. Remove from heat
    and stir in vanilla. Transfer to a jar and
    refrigerate until ready to use (sauce will
    thicken as it cools).

  2. For the milkshakes, into a blender,
    add ice cream, strawberries, milk,
    sugar, and vanilla, and blend until
    smooth. Carefully pour milkshake into
    2 serving glasses, top with whipped
    cream, and drizzle liberally with chilled
    strawberry syrup. Serve immediately.
