Makes 12 waffles


2 cups all-purpose flour


(^1) / 4 cup unsweetened coconut flakes
or shreds
(^1) / 4 cup finely chopped macadamia nuts
2 teaspoons baking powder
1 teaspoon baking soda
(^1) / 2 teaspoon salt
1 (6-ounce) container Follow Your
Heart Piña Colada Yogurt
1 (14-ounce) can full-fat coconut milk
1 (8-ounce) can crushed pineapple
in juice
(^1) / 2 cup melted coconut oil
(^1) / 4 cup maple syrup
For the garnish:
Sliced bananas, macadamia
nuts, coconut whip, toasted
coconut, and maple syrup



  1. In a large bowl, whisk flour,
    coconut flakes or shreds, macadamia
    nuts, baking powder, baking soda,
    and salt.
    2. In a separate bowl, whisk yogurt,
    coconut milk, pineapple (undrained),
    coconut oil, and maple syrup until
    smooth. Add wet ingredients to dry
    ingredients and stir with a rubber
    spatula until just combined, being
    careful not to overmix.
    3. Preheat a waffle iron and lightly
    grease. Ladle batter onto iron and
    spread lightly across surface before
    closing. Cook until waffles are golden
    brown, crisp on both sides, and no
    longer steaming, about 5 minutes.
    4. Remove waffles from iron and
    garnish with bananas, macadamia
    nuts, coconut whip, toasted coconut,
    and maple syrup.
