4 whole wheat hamburger buns,
toasted(^1) / 2 cup Green Goddess Sauce
(see recipe)
1 cup baby arugula
4 vegan patties (see recipes)
4 slices tomato
1 avocado, sliced into 8 wedges
1 cup alfalfa sprouts
Spread 1 tablespoon sauce onto top
and bottom buns. Onto bottom buns,
add arugula, patties, tomato, avocado,
and sprouts. Add top buns and serve.
The Sophisticate
Makes 4 burgers
2 tablespoons vegetable oil
3 cups sliced button mushrooms
(^1) / 8 teaspoon salt
(^1) / 8 teaspoon black pepper
4 vegan patties (see recipes)
4 slices vegan provolone cheese
4 sourdough hamburger buns,
toasted
(^1) / 2 cup Garlic Herb Aioli (see recipe)
1 cup Grilled Onions (see recipe)
- In a skillet over medium-high heat,
warm oil. Add mushrooms, salt, and
pepper. Sauté for 3 to 5 minutes, until
mushrooms have reduced in size to about
half. Remove from skillet and set aside,
reserving skillet. - Bake patties as directed. When frying,
use reserved skillet to let patties absorb
mushroom flavor. Add provolone cheese
to patties and cover skillet to melt. - Spread 1 tablespoon aioli onto top
and bottom buns. Onto bottom buns,
add^1 / 4 cup grilled onions, patties, and
mushrooms. Add top buns and serve.
