http://www.cakedecorationmagazine.co.uk September 2018 | 29MEET THE MAKERSThis is the secret of how we madeour lemon and elderflower cake tasteas good as it did for Prince Charles.It is sunshine on a spoon.If you can make your ownelderflower cordial that’s best but ifnot, shop bought will work just fine.INGREDIENTS: 3 eggs + 1 yolk 100g of caster sugar 100ml of elderflower cordial 100g of unsalted roomtemperature butterEQUIPMENT: saucepan glass bowl that can safely sit onthe rim of the pan.METHOD:1 Fill a small saucepan with aboutan inch of water and bring tothe boil, and then turn down to amedium heat to simmer.2 Whisk eggs and sugar in thebowl. Once combined, pour incordial and put the bowl on the panabove the simmering water.(The bowl should NOT touch thewater below.)3 Keep stirring the curd slowly onthe pan – it usually takes around tenminutes. Don’t walk away. Don’t stopstirring. Your patience will pay off!4 After a while the curd willthicken quite quickly.
