Practiceon kitchen roll first.11 Using royal icing on the board,secure the skirt part of the cake.12 Torte, fill and crumb coat then iceyour top tier using the white sugarpasteof your choice.13 Using smoothers, smooth pastearound sides and top of the cake, thenusing an upward motion on the side14 Cut out a 5cm x 7.6cm rectanglefrom white sugarpaste then add detailsaround the sides of the pocket and alsoa double stitch to the top of the pocketwith a stitching tool.``````15 Add a little water/glue just aroundoutside edges to attach pocket to thecake, around 3.8cm from the top. Leavethe top part of the pocket slightly awayfrom the cake so it looks open.
