Green apple tea
Serves 8–10
200g bulgur wheat
2 bunches flat-leaf parsley
6 spring onions
4 large tomatoes
Juice of 3 lemons
5 tbsp olive oil
1 cup water, boiled
1 Combine 240ml boiled water and
200g bulgur wheat in a small bowl
and mix. Place a tea towel over the
bowl so the steam is unable to escape.
Set aside until cool.
2 Finely chop the parsley, spring
onions and tomatoes and place them
into a large salad bowl.
3 Juice the lemons and pour juice
over the salad mixture. Add the olive
oil and season with salt and pepper.
Mix well.
4 Next, tip in the cooled bulgur wheat,
mix and it’s ready to serve. Leftovers
will keep in the fridge for 2–3 days.

4 green tea bags
950ml boiling water
1 tbsp honey (optional)
480ml apple juice, chilled
Sliced apples, to garnish
Mint sprigs, to garnishPlace the tea bags in a jug and cover
with the boiling water; allow to steep
for 5 mins. Discard used tea bags,
then stir in the honey (if using), until
dissolved. Next, add the chilled apple
juice. Serve garnished with fruit slices
