5 Slice the cylinder into roughly
12 buns. Brush all but 4 tbsp of the
remaining melted butter all over the
inside of a large baking tin or dish.
Nestle the buns in the dish. Cover with
a tea towel and leave somewhere
warm for 30–60 mins, or until they’re
risen and puffy. While they’re rising,
preheat oven to 180C/Fan 160C/Gas 4.
6 Brush the buns with the remaining
butter to glaze them, and dust over
the reserved cardamom sugar. Bake
for 20–25 mins till the buns are risen,
golden and firm to the touch. Best
eaten warm on the day, but they’ll
keep fine for a day or two, especially
if you reheat before eating.
