Makes 6
1 sourdough loaf
1 small jar of pesto
1 jar of artichoke hearts,sliced
120g rocket
1 mozzarella ball, sliced
1 Halve the sourdough through
the middle and spread thepesto
over both halves. Layerwiththe
artichokes, rocket and mozzarella,
and season to taste.
2 Sandwich the two halvestogether
and press together firmly.Wrap
tightly in clingfilm and placeona
baking tray with a heavyweight
on top. Transfer to the fridgeand
leave overnight.
3 Unwrap the sourdoughandcutinto
- Wrap each sandwichin greaseproof
paper and tie with string.
