WHAT TO FIND
WHERE

OLocation is the key to foraging
samphire, so look up and ask around
for the best local spots before you set
out or you’re likely to be disappointed.
OSamphire is found in mudflats and
estuaries all around the coast and
when you find it, it should be
abundant. It’s a bit of a hunt but
all the more thrilling when you
find a good spot.

ODon’t get confused with rock
samphire, which grows from rocky
outcrops. It’s not as tasty. Look
instead for marsh samphire. It’s fairly
obvious from the names, but they
don’t grow in the same places, so as
long as you have the habitat right,
you have the right plant.
OSamphire has succulent, bright
green stems and looks a little like a
non-spiny cactus.
OTake secateurs or scissors and snip
just above ground level. Never tug at
the plant and pull it out by the roots.
