AMCHOOR


Mangifera indica


Other common name: mango
powder

Flavors: tart, sweet, fruity

Amchoor is unripe green mango fruit that has been dried and ground to a powder.
Unlike the sweet and succulent mango,
this spice is tart and acidic, closer to lemon
or lime juice and tamarind than its fully rip-
ened fresh fruit. In fact, amchoor makes a
great dry substitute for lemon or lime juice
when your recipe needs less liquid. It can
be found sliced or in powder form. Dried
slices are light brown and hard.

In the Garden
Native to India, the tropical evergreen
mango tree can grow up to 100 feet
tall and produce fruit for more than 100
years in ideal conditions. Dwarf varieties
are reasonably easy to grow in small gar-
dens or containers, and they also bear delicious fruit. In more temperate climates,
plant a dwarf tree in a container to bring indoors in cooler weather; the plant won’t
tolerate temps lower than 40°F.
Size: Dwarf trees, 4 to 8 feet tall; full-size trees, up to 65 feet tall
Container: At least 20 inches in diameter and depth
Light: Full sun
Soil: Light to medium, rich, well drained
Plant: Young grafted trees from a nursery; seeds of store-bought mangoes will
not germinate.
