COmmON KITCHEN HERBS

Soil: Moist, rich, well drained
Plant: Young plants or cuttings
Water: Regularly, to keep the soil consistently moist
Harvest: Gently pinch the stems and they’ll easily
snap off. For the best, most potent flavor, harvest right
before the plant flowers.
Care: Trim off flower buds and harvest regularly to
keep your mint plants thriving. Place mulch around out-
door plants to retain moisture.

Keep It Fresh
Mint leaves will freeze well, so pop them
in the freezer for future use (see page
19). Mint is also often dried and used
as a seasoning in some Mediterranean
dishes, although it lacks the trademark
sweetness of fresh mint.

In the Kitchen
Dishes: Salads, fruit salads, marinades,
sauces, salsas, chutneys, curries, soups,
chocolate dishes
Prep: Chop, crush, or use whole fresh
leaves according to your recipe. Mint is a
potent herb, so use sparingly at first and
add more to reach your desired taste.
Serve: Mint brings its cool, fresh
flavor to all kinds of dishes, including
rich meats like lamb, chicken, and pork,
vegetable-and-herb salads, grains like
quinoa and couscous, cold soups like
gazpacho, and hot Indian curries and
dals. Use it in sauces for fish, wrap it up
in fresh spring rolls, or stir it into plain
yogurt to make a vibrant dipping sauce
or salad dressing. It pairs well with a sur-
prising range of flavors, from summertime herbs such as basil, cilantro, and dill, to spicy
favorites cumin, ginger, and cardamom, to sweet desserts with fruit and/or chocolate.
