COmmON KITCHEN HERBS

  • 83 –

Size: Up to 2 feet tall
Container: At least 1 gallon
Light: Full sun or partial shade
Soil: Well drained potting mix with peat moss and
perlite
Plant: Seeds or mature stems soaked in water under
direct sunlight for several days first
Water: Refresh your pond water every 2 days and spray
the plants and surface every other day.
Harvest: When the stems hit 5 or 6 inches tall, snip off
with kitchen or garden scissors, leaving about one to two inches of stem on the plant.
Harvest regularly.
Care: Trim regularly to promote new
growth. Once established, watercress
will withstand winters if placed under
shelter.

Keep It Fresh
Keep watercress dry if you plan to store
it for later use. The tender, leafy green
won’t freeze or dry well, so use within
two to three days.

In the Kitchen
Dishes: Salads, soups, sandwiches
Prep: Trim off thick stems, then chop or
use whole in any dish.
Serve: Watercress pairs naturally with
other salad greens, offering a spicy
counterpoint to mild Romaine, spinach,
Boston, and iceberg lettuces.
