ExOTIC HERBS

Soil: Moist, rich, well drained. Add compost and mulch
to help retain moisture.
Plant: Seeds or root cuttings
Water: Regularly, when soil feels dry
Harvest: Snip leaves all through the growing season
and snip flowers when they bloom in summer. For
seeds, wait until the flowers bloom and produce seeds,
then cut the flowers from the stems into a paper bag
and let them dry completely.
Care: Trim regularly and remove dead flowers to pro-
mote new growth. Prune heavily in the fall to protect from winter weather.

Keep It Fresh
Bergamot leaves and flowers should be
used as soon as possible after harvest-
ing. They dry wonderfully for use in teas
and potpourris (see directions on page
20). To store fresh bergamot for future
use, chop and freeze (see page 19).

In the Kitchen
Dishes: Teas, jams, dips, sauces, salads,
beverages
Prep: Use both leaves and flowers
whole or chopped in any dish. Dry them
if making tea.
Serve: Sprinkle fresh bergamot sparingly
over salads, add to rubs and marinades
for meat and fish, or stir into yogurt,
cream, or soft cheeses for luscious dips.
It also adds an interesting spicy-sweet
touch to homemade breads and cakes.
