1. Plunge the sweetcorn and beans intoboiling water for 2 mins to soften, then drain.2. Heat the vegetable oil in a large wok,then add the onion and garlic, and cookfor a couple of mins. 3. Add the curry paste and fry for 2 mins, stirring. Push the onion mixture to one side. 4. Increase the heat, add the steak and cook for 2 mins to brown. 5. Add the red pepper, sweetcorn and beans and mix well. Stir in the lime leaves, sugar, black bean sauce, lime juice, fish sauce and 100ml water or more if you like a runnier sauce. Bring to a simmer for a couple of mins. 6. Season with black pepper, then sprinkle on the Thai basil and mint.
