thai Beef cUrrY### 245CaloriesDinnerServes 3 Ready in 25 minsQ 6 baby sweetcorn, halvedQ 100g green beans, halvedQ 1tbsp vegetable oilQ 1 onion, choppedQ 2 garlic cloves, choppedQ 2tbsp yellow Thai curry pasteQ 250g sirloin steak, fat trimmed,cut into stripsQ 1 red pepper, deseeded and slicedQ 8 kaffir lime leavesQ 1tsp brown sugarQ 2tbsp black bean sauceQ Juice of 1 limeQ 4tsp Thai fish sauceQ 12 Thai basil leavesQ 8 mint leaves, slicedMethod1. Plunge the sweetcorn and beans intoboiling water for 2 mins to soften, then drain.2. Heat the vegetable oil in a large wok,then add the onion and garlic, and cookfor a couple of mins. 3. Add the curry paste and fry for 2 mins, stirring. Push the onion mixture to one side. 4. Increase the heat, add the steak and cook for 2 mins to brown. 5. Add the red pepper, sweetcorn and beans and mix well. Stir in the lime leaves, sugar, black bean sauce, lime juice, fish sauce and 100ml water or more if you like a runnier sauce. Bring to a simmer for a couple of mins. 6. Season with black pepper, then sprinkle on the Thai basil and mint.
