Put the caster sugar in a largesaucepan with 125ml cold water.Heat gently to dissolve the sugar,then bring to the boil and simmerfor a couple of minutes to make asugar syrup.2. Add the gooseberries and cookfor 15 minutes, or until tender. 3. Meanwhile, make the custard. In a small bowl, blend the cornflour with a little milk to make a paste. Bring the rest of the milk to the boil in a small saucepan. Stir some of the hot milk into the paste, then pour the paste into the pan and cook for 3 minutes, stirring. 4. Allow the mixture to cool for 2 minutes, then add the beaten egg and caster sugar.Stir over a low heat for a few minutes,until the custard thickens. Stir inthe almond essence.
5. Push the cooked gooseberriesthrough a sieve to make a puree. Mixthe puree into the custard. Spoon thefool into serving glasses and chill untilrequired. Top with a few smallgooseberries, to serve.
