INGREDIENTS


3   medium  eggs
Pinch salt and freshly ground black pepper
½ tablespoon butter
¼ cup shredded Swiss, cheddar, or Monterey Jack cheese

DIRECTIONS



  1. In a small bowl, combine the eggs, 2 tablespoons water, salt, and pepper.

  2. Beat with a fork until ingredients are well mixed.

  3. Heat a nonstick skillet over medium heat, and add the butter.

  4. When the butter melts, add the egg mixture.

  5. Stir eggs gently with a heat-proof, nonmetallic spatula.

  6. Add the cheese, and cook until eggs are firm. Fold in half. Serve.
