INGREDIENTS


3   medium  eggs
Pinch salt and freshly ground black pepper
1 tablespoon butter, divided
cup sliced fresh mushrooms

DIRECTIONS



  1. In a small bowl, combine the eggs, 2 tablespoons water, salt, and pepper.

  2. Beat with a fork until ingredients are well mixed.

  3. Heat a nonstick skillet over medium heat, and add ½ tablespoon butter.

  4. Add the mushrooms, and cook until tender. Remove from the pan, and
    set aside.

  5. Add the remaining butter, and heat until melted.

  6. Stir eggs gently with a heat-proof, nonmetallic spatula. Add the
    mushrooms, and cook until eggs are firm. Fold in half. Serve.

8   medium  eggs

¼ cup whole milk or half-and-half 2 tablespoons extra-virgin olive oil,
divided ½ cup chopped onion
½ cup chopped red peppers
1 teaspoon minced garlic
2 ounces crumbled feta cheese
¼ cup pitted olives
5 leaves fresh basil
Pinch freshly ground black pepper
2 tablespoons grated Parmesan cheese

DIRECTIONS



  1. Combine the eggs, salt, and milk, and beat until ingredients are mixed.
