INGREDIENTS
3 tablespoons extra-virgin olive oil, divided
1 small onion, diced
1 green pepper, chopped
1 red pepper, chopped
2 cups fresh, chopped spinach
8 medium eggs
½ cup whole milk
¾ cup shredded cheddar cheese
DIRECTIONS
- Heat a large skillet; add 2 tablespoons olive oil.
- Sauté the onion, peppers, and spinach for 6 to 7 minutes.
- Remove the mixture from heat. Set aside, and let cool for 10 minutes.
- Preheat the oven to 350°F, and coat a separated muffin pan with the
remaining olive oil. - Mix the eggs with the milk, cheese, and sautéed onion mixture, and cook
for 5 minutes. - Divide the mixture into the muffin pan, and bake at 350°F for 17 to 20
minutes. Remove from the oven and serve.
