2 chicken breasts
3 teaspoons extra-virgin olive oil
1 teaspoon unsalted butter
½ cup shallots
2 cloves garlic, minced
4 roasted tomatoes, seeded and chopped
Pinch freshly ground black pepper
DIRECTIONS
- Clean the chicken breasts.
- Heat the olive oil and butter in a medium skillet over medium heat.
- Add the shallots and garlic, and cook for 1 minute.
- Add the chicken, and sauté for 7 to 10 minutes on each side, until
thoroughly cooked. - Add the tomatoes, and cook for an additional 3 minutes.
- Add pepper, to taste. Serve.
