½ cup shallots
2 cloves garlic, minced
4 roasted tomatoes, seeded and chopped
Pinch freshly ground black pepper

DIRECTIONS



  1. Clean the chicken breasts.

  2. Heat the olive oil and butter in a medium skillet over medium heat.

  3. Add the shallots and garlic, and cook for 1 minute.

  4. Add the chicken, and sauté for 7 to 10 minutes on each side, until
    thoroughly cooked.

  5. Add the tomatoes, and cook for an additional 3 minutes.

  6. Add pepper, to taste. Serve.
