2   cups    sautéed spinach ½   cup cream   or  water
1 tablespoon butter
1 cup mushrooms
½ medium red onion, chopped
Pinch salt and freshly ground black pepper

DIRECTIONS



  1. Clean the chicken breasts. Cut a pocket into each chicken breast, and fill
    with the spinach.

  2. Poach the breasts in cream or water for 15 minutes.

  3. Heat the butter in a medium skillet. Add the mushrooms, and sauté for 3
    minutes.

  4. Add the onion, and cook for 3 additional minutes.

  5. Add the chicken, and sauté for several minutes on each side, until
    thoroughly cooked. Add salt and pepper.

  6. Spread the mushroom mixture over the chicken. Serve.


Chicken with Tomato and Artichokes

½ cup roasted tomatoes
2 cloves garlic, minced

¼ teaspoon chopped fresh chervil
¼ teaspoon fresh chives
Pinch salt and freshly ground black pepper
