DIRECTIONS
- Clean the chicken breasts. Cut a pocket into each chicken breast, and fill
with the spinach. - Poach the breasts in cream or water for 15 minutes.
- Heat the butter in a medium skillet. Add the mushrooms, and sauté for 3
minutes. - Add the onion, and cook for 3 additional minutes.
- Add the chicken, and sauté for several minutes on each side, until
thoroughly cooked. Add salt and pepper. - Spread the mushroom mixture over the chicken. Serve.
