INGREDIENTS


6   medium  eggs
4 ounces goat cheese
¼ cup cream
1 tablespoon fresh thyme or marjoram
Pinch salt and freshly ground black pepper
1 tablespoon unsalted butter

DIRECTIONS



  1. Beat the eggs. Stir half the goat cheese into the beaten eggs, and add the
    cream, thyme or marjoram, salt, and pepper.

  2. Melt the butter in a nonstick skillet, and add the egg mixture.

  3. Continue to cook on low heat, stirring in the remaining goat cheese, until
    the mixture is firm. Serve warm.


Zucchini Quiche


SERVINGS: 2 to 3
PREPARATION TIME: 1 hour


INGREDIENTS


2   tablespoons butter, divided
2 cups zucchini, cut into thin half-rounds
12 cherry tomatoes
2 tablespoons wholewheat flour
2 large or 3 medium eggs
½ cup full-fat yogurt
1 teaspoon fresh oregano
8 ounces cream cheese
cup grated Parmesan cheese

DIRECTIONS



  1. Preheat the oven to 375°F.

  2. Coat a large ovenproof skillet with 1 tablespoon butter, and set aside.

  3. In another skillet, sauté the zucchini in the remaining butter until soft.
    Add the tomatoes, and cook for 3 minutes. Remove from the heat, and let
    cool for 5 to 10 minutes.
