INGREDIENTS
6 medium eggs
4 ounces goat cheese
¼ cup cream
1 tablespoon fresh thyme or marjoram
Pinch salt and freshly ground black pepper
1 tablespoon unsalted butter
DIRECTIONS
- Beat the eggs. Stir half the goat cheese into the beaten eggs, and add the
cream, thyme or marjoram, salt, and pepper. - Melt the butter in a nonstick skillet, and add the egg mixture.
- Continue to cook on low heat, stirring in the remaining goat cheese, until
the mixture is firm. Serve warm.
Zucchini Quiche
SERVINGS: 2 to 3
PREPARATION TIME: 1 hour
INGREDIENTS
2 tablespoons butter, divided
2 cups zucchini, cut into thin half-rounds
12 cherry tomatoes
2 tablespoons wholewheat flour
2 large or 3 medium eggs
½ cup full-fat yogurt
1 teaspoon fresh oregano
8 ounces cream cheese
cup grated Parmesan cheese
DIRECTIONS
- Preheat the oven to 375°F.
- Coat a large ovenproof skillet with 1 tablespoon butter, and set aside.
- In another skillet, sauté the zucchini in the remaining butter until soft.
Add the tomatoes, and cook for 3 minutes. Remove from the heat, and let
cool for 5 to 10 minutes.
