INGREDIENTS
½ pound fresh or frozen fish fillets (½-to -inch thick)
1 tablespoon butter
1 cup sliced mushrooms
2 tablespoons sliced green onion
½ teaspoon fresh, or teaspoon dried, tarragon or thyme
Pinch salt
DIRECTIONS
- Thaw fish if frozen. Rinse, dry, and set aside.
- Preheat oven to 375°F. Arrange the fish in a baking dish. Sprinkle with
salt. - Melt the butter in a small saucepan over medium heat. Add the
mushrooms, onions, and half the herbs. Cook until the mushrooms and
onions are tender. Spoon the mushroom mixture over the fish. - Sprinkle with additional herbs.
- Bake, covered with aluminum foil, at 375°F for 12 to 15 minutes, or until
the fish flakes. Remove from the oven, and serve.
Grilled Salmon with Tomato–Pepper Relish

1 tomato, peeled, seeded, and cut into strips
2 tablespoons extra-virgin olive oil, divided
1 teaspoon chopped fresh cilantro
1 (9-ounce) salmon fillet
Pinch salt and freshly ground black pepper

- Turn the oven to high broil.
- Mix together the peppers, onion, tomato, 1 tablespoon olive oil, and
