INGREDIENTS


½   pound   fresh   or  frozen  fish    fillets (½-to    -inch  thick)
1 tablespoon butter
1 cup sliced mushrooms
2 tablespoons sliced green onion
½ teaspoon fresh, or teaspoon dried, tarragon or thyme
Pinch salt

DIRECTIONS



  1. Thaw fish if frozen. Rinse, dry, and set aside.

  2. Preheat oven to 375°F. Arrange the fish in a baking dish. Sprinkle with
    salt.

  3. Melt the butter in a small saucepan over medium heat. Add the
    mushrooms, onions, and half the herbs. Cook until the mushrooms and
    onions are tender. Spoon the mushroom mixture over the fish.

  4. Sprinkle with additional herbs.

  5. Bake, covered with aluminum foil, at 375°F for 12 to 15 minutes, or until
    the fish flakes. Remove from the oven, and serve.
