Grilled Halibut with Basil and Cherry Tomatoes

INGREDIENTS
½ bunch basil
½ cup plus 1 tablespoon extra-virgin olive oil, divided
5 yellow cherry tomatoes, halved
5 red cherry tomatoes, halved
1 (9-ounce) halibut fillet
Salt and freshly ground black pepper
DIRECTIONS
- Preheat the grill.
- Blanch the basil leaves by immersing them in hot water. Mix the basil
with ¼ cup olive oil. - Add the halved red and yellow tomatoes to the basil mixture.
- Season the fish fillet with salt and pepper, and rub it with ¼ cup olive oil.
- Place the fillet on a grill for 8 minutes on each side. Transfer the fish to a
plate, and spoon the tomatoes over the fish. - Drizzle with the remaining 1 tablespoon olive oil. Serve.
