1 cup canned diced tomatoes
1 (8-ounce) can tomato sauce
1 onion, sliced
2 cloves garlic, minced
2 chicken base cubes
1 bay leaf
3 teaspoons Cajun seasoning
1 pound boneless, skinless chicken
½ pound fresh or frozen okra
¼ cup cream
DIRECTIONS
- Place the liquid from the clams into a large slow cooker (do not add the
clams). - Add the brown rice, shrimp, wine, tomatoes, tomato sauce, onion, garlic,
chicken base cubes, bay leaf, and Cajun seasoning. - Place the chicken on top of the mixture.
- Cook for 4 to 5 hours on low heat.
- Add the okra in the last hour, if frozen.
- Add the clams, cream, and okra (if fresh) in the last 30 minutes of
cooking time. Remove the bay leaf, and serve.
Cauliflower Wild Rice

INGREDIENTS
½ head cauliflower
1 teaspoon butter
¼ cup wild rice
DIRECTIONS
- Place the cauliflower in a food processor or blender, and process until the
cauliflower is well chopped. - Steam or stir-fry the cauliflower in the butter for several minutes. Avoid
overcooking. Set aside.
