12 ounces wild rice
14 jumbo shrimp (peeled and deveined)
2 teaspoons paprika
Pinch salt and freshly ground black pepper
½ clove garlic, minced
1 tablespoon extra-virgin olive oil
DIRECTIONS
- Cook the rice according to the package directions. Set aside.
- Mix together the shrimp, paprika, salt, pepper, and garlic in a separate
bowl. - Heat the olive oil in a skillet. Add the shrimp, and stir-fry for 2 to 3
minutes, until golden brown. - Serve over the wild rice.
