Duck Breasts in Grape Champagne

INGREDIENTS
1 teaspoon macadamia oil
3 (7-ounce) duck breasts, with skin
4 ounces unsalted butter
1½ shallots, minced
8 ounces seedless grapes, halved
12 ounces champagne
6 ounces vegetable stock
1 tablespoon agave
2 teaspoons sea salt
¼ teaspoon ground white pepper
DIRECTIONS
- Preheat oven to 350°F.
- Heat macadamia oil in a saucepan over medium heat.
- In a saucepan, add 1 tablespoon of macadamia oil and heat until hot.
- Add duck breast and cook until crispy and browned on both sides,7 to 10
minutes. - Transfer the duck breasts to a baking dish, and bake at 350°F for 10
minutes. - Add the butter, shallots, and grapes to a pan. Cook 5 minutes or until
tender. Add the champagne and raise the heat to cook off the alcohol.
