- Add the eggplant pulp, shrimp, crabmeat, parsley, egg, lemon juice,
Worcestershire sauce, salt, and pepper to the skillet, and remove from
heat. - Spoon the pulp mixture into the eggplant shells. Sprinkle the eggplant
with the Parmesan cheese. - Place the dish containing the eggplant into a larger baking dish. Fill the
larger dish with 1 inch of water, and bake at 350°F for 30 minutes. Serve.

INGREDIENTS
1 (8-inch) wholewheat pita bread shell
½ cup mozzarella cheese, divided
1 cup mixed salad greens
2 medium plum tomatoes, chopped
1 small red onion, chopped
10 chopped olives
6 cooked, peeled, and deveined shrimp
1 tablespoon feta cheese
DIRECTIONS
- Preheat the oven to 450°F.
- Top the pita with half the mozzarella cheese, and bake for 5 minutes at
450°F. - Combine the salad greens, tomatoes, onion, olives, and shrimp in a large
bowl. - Top the bread shells with the shrimp mixture, and sprinkle with the feta
cheese and the remaining mozzarella cheese. Cut into wedges, and serve.
