PREPARATION TIME: 1 hour
INGREDIENTS
4 pounds ripe plum tomatoes, divided
¼ cup extra-virgin olive oil, divided
4 cloves garlic, peeled and minced
1 onion, minced
2 teaspoons red pepper flakes
Pinch salt and freshly ground black pepper 2 tablespoons tomato paste
1 teaspoon fresh basil
1 tablespoon chopped parsley
2 (2 pound) lobsters, split lengthwise
½ pound wholewheat pasta
DIRECTIONS
- Place the tomatoes in a large pot of boiling water. Cook for 1 minute.
Transfer the tomatoes to a food processor or blender, and puree until soft. - Heat 1 tablespoon olive oil in a large saucepan over medium heat. Add
the garlic and onion, and cook 3 minutes. Add the tomatoes, and bring to
a simmer. Cover 30 minutes, stirring occasionally. - Add the pepper flakes, salt, pepper, tomato paste, basil, and parsley.
Remove from the heat. Set aside. - Place the lobsters in a steamer for 5 minutes. When the lobsters are
finished, remove the meat from the shells, and cut the meat into pieces. - Cover with the sauce, and cook for an additional 5 minutes. Add water if
the sauce is too thick. Cook for another 5 minutes. - While the lobsters are cooking, cook the pasta until al dente, about 7
minutes, and then drain. - Serve the pasta with the lobster and sauce on top.
