·HOW TO MAKE YOUR OWN VEGETABLE COLORING
Gather these materials:An alcoholburner;*pound ofspinach;1 small beet;
grain alcohol; apot;3 test tubes; a fork; 2 funnels; filterpaper;a glassrod;
and 4 glass jars, 3 of them very small. (Get yourmother'spermission to use the
stove.)
Follow this procedure:1.On the stove, boil the spinach in water forabout 2
minutes. Filter the spinach and waterthrougha funnel lined with filter paper
into a medium or large jar. Place the spinach and any coloringmattercaught in
the filter into one of the small glass jars. Add 1 inch of alcohol to it. Putabout
2 inches of water in the pot. Then put the glassjarin the pot and heat it on the
stove. CAUTION: Keep the flame low because alcohol vapor is flammable.
Allow the water in the pot to simmer, but do not allow the alcohol in thejar
to get hot enough to boil. Keep stirring and squashing the spinach with a glass
rod. After 10 or 15 minutes, strain the spinach, letting the liquid flow into

anothersmall jar. Now filter the liquidthrougha funnel lined with filter paper
into a test tube. If the filter paper separatesoutall or most of the green color,
returnwhatever got caught in the filter paper to the warm alcohol. Repeat the
process of heating and filtering. Otherwise, set the funnel aside, and let the
liquid stand until the alcohol evaporates from it completely. Then add*test
tubefulofwater to the tube, stir with the glass rod, and pour the contents of
the tube intoanothersmall jar. Cover ittightly.:
