Extra-virgin olive oil should be your main dietary oil.
Saturated fat from whole-food sources is healthful in
the context of a diet that is devoid of sugar, low in
carbohydrates, and high in fiber, omega-3s, and
essential nutrients from plant foods.
Trans fats are a dietary devil. Avoid anything with
hydrogenated oil or processed polyunsaturated oils,
which are at least 5 percent trans fat even without
hydrogenation.
Certain nutrients in vegetables are not absorbed
unless in the presence of fat—salads and vegetables
therefore should always include a healthy fat source.
