A LARGE POT NEVER BOILS
Want to really blow the mind of one of the large-
pot-insisters? Lay this one on them: if you use too
large a pot, the water will actually take longer to
come back up to a boil than a small pot. Why is that?
It’s because the larger the pot, the more surface
area it has, and the more energy is being constantly
lost to the environment. Any amount of energy-out
from the pot-water system has to be made up for
with energy-in from the burner, which leaves less
energy free to reheat that water. Indeed, use a pot
large enough, and the energy-out will be so great
that your burner will simply not be powerful enough
to ever bring it to a full boil.
