Wash the lettuce, and dry carefully by laying out on a
paper towel–lined baking sheet.
- With clean hands, gently toss the lettuce and dressing
together in a large serving bowl. Add the croutons and
toss gently to combine. Sprinkle with the cheese and

1 cup mayonnaise, preferably homemade (here)
2 ounces Parmigiano-Reggiano, finely grated (about 1
cup)
2 teaspoons Worcestershire sauce
4 anchovy fillets
2 medium cloves garlic, minced or grated on a
Microplane (about 2 teaspoons)
½ cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
