*Extra-virgin olive oil is great for cold applications, such as
salad dressings, but should not be used for cooking; heat
causes the oil to oxidize, which is harmful to your health.


**MCT oil can be found at most health food stores, but if
you have trouble finding it, you can use avocado oil,
macadamia nut oil, or extra-virgin olive oil instead, keeping
in mind that avocado oil is the most neutral-flavored of the
three.

Two kinds of fats should be avoided on a ketogenic diet:
trans fats and polyunsaturated fatty acids (PUFAs).


Trans fats are the most inflammatory fats; in fact, they are
among the worst substances for our health that we can
consume. Many studies have shown that eating foods that
contain trans fats increases the risk of heart disease and
cancer.


Here is a list of trans fats to avoid at all costs:



  • Hydrogenated or partially hydrogenated oils (check
    ingredient labels for these sneaky fats)

  • Margarine

  • Vegetable shortening
