MEATBALLS IN
TOMATO SAUCE
Sauce:
2 T olive oil
1 clove garlic, minced
3/4 c chopped onion
2-10.75 oz cans tomato
puree
1 t salt
1/8 t pepper
1 bay leaf
2 t sugar
Meatballs:
3 slices white bread
1/3 c milk
1 lb ground beef
2 eggs
1 t salt
1/8 t pepper
1 clove garlic, minced
2 T chopped parsley
2 T shortening
DIRECTIONS: Sauce -
Heat olive oil in a
saucepan. Add garlic and
onion. Cook until golden
brown. Add tomato puree,
salt, pepper, bay leaf and
sugar. Bring to a boil,
reduce heat and simmer for
45 minutes, stirring
occasionally. Meatballs -
Tear bread in chunks into a
mixing bowl. Add milk
and let stand until
absorbed, about 5 minutes.
Add ground beef, eggs,
salt, pepper, garlic and
parsley. Shape into 12
balls. Melt shortening in a
skillet and brown meatballs
well. Add tomato sauce,
simmer for 45 minutes,
stirring occasionally. Serve
over hot, cooked spaghetti.
SWEDISH
MEATBALLS WITH
DILLED NOODLES
Meatballs:
3/4 lb ground chuck
1/2 t salt
1/2 t pepper, divided
1/4 t Worcestershire
sauce
1/4 t dried thyme
1/3 c butter
1 1/2 t flour
1/2 c heavy cream
1/2 c water
1 t beef bouillon
granules
Noodles:
1 t salt
12 oz of wide noodles
1/2 c cottage cheese
2 T chopped fresh dill
Dash of pepper
DIRECTIONS: In a
bowl, mix together ground
chuck pepper, salt, 1/4 t
pepper, Worcestershire
sauce, and thyme. Shape
into 18 meatballs. Melt
butter in a large skillet.
Sauté meatballs until
browned. Place in a 2
quart casserole. Remove
all but 1 T drippings from
skillet. Stir in flour until
smooth. Gradually stir in
cream and 1/2 cup water.
Heat to boiling. Add
bouillon granules and
remaining pepper. Simmer,
uncovered, for 3 minutes.
Pour sauce over meatballs.
Cover and bake at 350
degrees for 25 minutes.
Noodles - In a 2 quart
saucepan, cook noodles in
salted water according to
package directions. Drain
and return to saucepan.
Add cottage cheese, dill
and pepper. Tossing lightly
to combine. Reheat gently.
Serve meatballs over hot
noodle mixture.
SOUR CREAM
MEATBALLS
1 1/2 c torn day old
white bread
1/2 c water
1 1/2 lbs ground beef
1 small onion, grated
1 t salt
1/4 t pepper
1 t caraway seeds
1 c sour cream, divided
Dried bread crumbs
2 T butter
1/2 c beef broth
2 t lemon juice
1- 10.5 oz can cream of
mushroom soup
Hot butter noodles
DIRECTIONS: Place
torn bread in a large bowl.
Add water and let soak for
5 minutes. Squeeze out
excess liquid. Return bread
to bowl. Add ground beef,
onion, salt, pepper,
caraway seeds and 2
tablespoons sour cream.
Mix well. Shape into 1
inch balls. Roll in dried
bread crumbs. Melt butter
in a deep skillet. Brown
meatballs on all sides.
Remove meatballs and
pour off excess grease.
Add beef broth and lemon
juice. Bring to a boil,
blending pan scrapings into
mixture. Stir in soup and
rest of sour cream. Blend
well. Return meatballs and
heat thoroughly without
boiling. Serve over hot
buttered noodles.

Rotary Club of Albion
The Rotary Club of Albion
was honored to have Gary
Tompkins, county commis-
sioner for the 7th District of
Calhoun County, as the
speaker on July 15.
Gary has spent 30 years in
public life and is a sixth gen-
eration resident of Calhoun
County. Gary has served on
committees and commissions
and represents the Albion
area in great fashion. He
brought us up to date on how
the American Rescue Funds
are appropriated in the area
and is reviewing any sugges-
tions residents may offer.
Calhoun County will receive
$26 million, $13 million in
2021 and $13 million in
- He also talked about
the Broadband Task Force,
working to see where there
are gaps, studying COVID
results, and the upcoming
survey being sent to resi-
dents. The survey will
include a paper survey, an
online survey and a text mes-
sage survey. The survey will
take about three minutes and
Gary needs a strong response
from the residents. His com-
ments on the roads and streets
included his efforts on our
behalf to get funding for
those improvements. Other
topics he touched on were:
COVID clinics (he has sug-
gested a clinic at the county
fair to reach rural residents;
the centenarian stories
(including the announcement
that the Bohm Theatre has
received a grant for senior
matinees); and the Walk for
Warmth on September 16.

Bible Church
VBS July 26-30
The Maple Grove Bible
Church invites children, pre-
school age to students coming
out of the sixth grade, to
attend their Vacation Bible
School, “The Great Escape.”
Sessions will be July 26-30
from 6-8:45 p.m., daily.
Studies will parallel the life of
Moses in the Bible with the
life of Jesus.
Stories, songs, contests,
and games are skillfully
woven together to give each
child a fun-filled learning
experience. The program is
directed and presented by
“Uncle Al” Ross from RBM
ministries out of Kalamazoo.
The church will be running a
real Go-Kart track every
night, free of charge. Parental
permission slips will have to
be signed.
The young kids will enjoy
the church’s new 29 apparatus
Play Kingdom. On Sunday,
July 25 at 6:30 p.m., VBS
kicks off with a Fairmont
Fair. Fun snacks and carnival
games galore will be open to
all children and their parents
starting at 6:30 p.m. At that
time children will be able to
enroll early.
All of this occurs on the
church grounds located at
18511 L Drive South, on the
corner of 18 1/2 Mile Road
