Some milk is also freeze-dried. With most of
its water removed, powdered milk is safe
from microbial attack. Most powdered milk is
made from low-fat milk because milk fat
quickly goes rancid when exposed to
concentrated milk salts and atmospheric
oxygen, and because it tends to coat the
particles of protein and makes subsequent
remixing with water difficult. Powdered milk
will keep for several months in dry, cool
conditions.
