Serves 2 to 31 cup potato fl akes2 tsp. baking powder1 tsp. onion powder1 cup all-purpose fl our4 Tbsp. cornstarch1 Tbsp. canola oil2 tsp. salt1 Tbsp. chives (optional)1 packet sour cream (optional)AT HOME­Store cornstarch and canola oil inseparate leakproof containers. Pack sour creampacket and chives separately. Combine otheringredients in a zip-top bag.IN CAMP­ Combine cornstarch with 4 tablespoonswater and stir until smooth. Mix in dry ingredients untilbatter is slightly lumpy.Heat oil in a skillet over medium-high heat. For eachpancake, pour ½ cup batter into the pan and cook each sidefor about 3 minutes (until browned). Remove from heat anddivide into bowls.Boil 1 ½ cups water in the same potand stir in potato fl akes. Let thicken 2minutes.
