fresh, vine-ripened tomatoes, use canned, whole, peeled organic
tomatoes which are vine-ripened and packed without preservatives.
The canned ones are easier and quicker to make. When cooked down
to a thicker puree, tomatoes take on a unique taste all their own and
even without adding anything but salt, you’ll have a great-tasting
sauce. If you like tomato sauce, you’ll love this simple way of making
it. It’s a guarantee that people who taste it will ask for the recipe! You
can freeze this sauce in small containers and use it when you want.
Once you have the basic sauce, if time permits, you can add other
ingredients, like garlic, parsley, or a sprinkle of Parmesan or Romano
cheese, or even a touch of sour cream.


Basic Cheese Sauce
This is simply made from heavy cream, butter, cheese and salt. Melt
about a quarter-stick of butter, add about a cup of heavy cream, and
when hot, add enough cheese to make it taste delicious — about two
or three tablespoons or more. Add sea salt to taste. Grated Parmesan
or Romano works great, or use your favorite cheese.


Eating on the Run
The realities of life dictate that you won’t always be able to eat the
way that’s best. When you travel, are late for work, or somehow find
you can’t get a good meal when you need it, you’ll have to find the
best alternative. There are some acceptable options. If you’re away
from home and are having trouble finding good food, consider going
to a deli for a chef’s salad, or just some sliced meats and cheeses. Or,
go to a diner for some eggs with a side of vegetables. In some restau-
rants, prepackaged liquid eggs are used for scrambled eggs and
omelets, so get them “sunny-side up.”
Agreat alternative is to eat a healthy energy bar. Since you’ll have
a difficult time finding one in the store that is acceptable, always have
a batch of homemade Phil’s Bars on hand.


Foods for Children
One of the most common dietary questions I receive from people
relates to feeding their children. The answer, in principle, is relatively
simple. From baby’s first foods, they eat much the same things adults
