Allow to sit for 30 minutes before using.
If you want a garlicky lamb, chop up a few cloves of garlic and
throw them in there too.
This is a case where it pays to own a probe thermometer. Place
the probe in the thickest part of the lamb and allow the wire to
trail out of the oven to the digital display on the counter.
Simply monitor the display until the temperature reaches
135°F; you’ll get perfectly pink lamb.
